Le vecchie vigne di Quinta Vale D. Maria sono divise in diversi appezzamenti e ogni appezzamento viene vendemmiato a mano. Le uve vengono selezionate prima di entrare in cantina. Vengono diraspate e pigiate in frantoio da 1 a 3 giorni prima della fermentazione che avviene in frantoio e/o in tini di acciaio inox. Nel torchio i vini vengono pigiati a piedi ogni notte, in tini di acciaio inox, e rimontati manualmente. I vini vengono rimossi in modo pulito in botti nuove di rovere francese da 225 litri, da varie botti (Seguin Moreau, François Fréres, Taransaud, Nadalie e Berthomieu), dove avviene la fermentazione malolattica. Tutti i vini invecchiano poi per 21 mesi in botti di rovere francese (70% botti nuove e 30% botti di un anno), mantenendo completamente separati i diversi lotti ottenuti da ciascuna fermentazione fino alla composizione del lotto finale, circa un mese prima imbottigliamento.
È concentrato, con una struttura elegante e un vigore che intensifica la trama succosa di questo vino. È equilibrato, con una sensazione di freschezza in una miscela armoniosa, che rende questo vino estremamente elegante.
