Com uvas das castas mais típicas do Alentejo, produzidas na sub-região de Borba, se elaborou o vinho Rótulo Cortiça, um verdadeiro ex-libris da Adega de Borba. Provenientes de vinhas velhas, as uvas tiveram um rigoroso contro- lo na evolução da maturação, tendo sido vindimadas em pequenas quantidades. Na Adega, após o desengace e esmagamento suave da uva, iniciou-se a fermentação alcoólica que se prolongou por cerca de 10-15 dias com a temperatura controlada a 24ºC, para maior extração dos aromas e sabores frutados da uva. Para aumentar a complexidade polifenólica, os taninos e a estrutura do vinho, este permaneceu em cuba num processo de maceração pós-fermentativa.A fermentação malolática ocorreu posteriormente em recipientes de inox. Para enaltecer e elevar as suas características organoléticas, o vinho estagiou 12 meses em barricas de 3.º e 4.º ano, de carvalho frances e em tonéis de madeira exótica, findo o qual se seguiu um estágio de 6 meses em garrafa em cave.
